STORAGE AND HANDLING
The do's and don'ts of storage and handling
DO'S
- Refrigerate immediately after receiving and store at 2-4°C and 95% humidity. Air flow from coolers should be avoided
- Store in original cartons as non-porous materials accelerate deterioration of the product
- Mushrooms require little preparation. There's no need to peel them - apart from being a fiddly job, a lot of the goodness and flavour is in the skin. If necessary, simply use a soft pastry brush to gently brush any dirt from the surface and trim the dry end of the stem. your mushrooms are now ready to use!
DON'TS
- Store near items which have strong odours as they will be absorbed by the mushrooms
- stack heavy items on top of mushroom cartons
